The freshest tea leaves are picked early in the morning while they are still damp. The leaves are flattened and put through the regular tea production procedure of drying, oxidation and firing. Usually, it is the roasted green tea which is used to make flower tea; however, some varieties are also made up blooming tea balls flowers in their blossom and with peak fragrance are selected for producing flowering tea. The flowers generally used are jasmine, white orchid, globe amaranth, lily, hibiscus, chrysanthemum, and rose. The mixture of leaves and flowers is tied into a bundle using a soft cotton thread. The bundle is designed into various shapes like cones, mushrooms flowering tea, balls etc. Bundling of tea leaves is a labor intensive and time consuming process requiring great skill and effort. As tea leaves are porous, they have a high tendency to absorb both moisture and scent. The aroma of the flowers seeps into the tea leaves lending artisan teas their renowned floral fragrance.
As a result of moisture present in the mixture, these bundles undergo fermentation which causes an increase in their temperature. As the temperature attains a certain degree, the bundles are shuffled using the “rick” which brings down the temperature and allows the leaves and flowers to “breathe’ again. This process is repeated to fully merge the aroma and flavour of flowers with leaves.
Finally, the flowers are sifted out of the leaves and the leaves are roasted. Some fresh flowers may be added to the leaves again after roasting to further accentuate its floral aroma. The tea is now ready for consumption. The whole process is carried out under natural conditions to preserve the original taste and nutrients of the leaves and flowers.
